For the pastry:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup warm water
- 1/4 cup olive oil
- 1 egg
For the spinach filling:
- 2 cups fresh spinach chopped
- 1 cup feta cheese crumbled
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 small onion finely chopped
- 2 cloves garlic minced
- 1/4 cup fresh parsley chopped
- Salt and pepper to taste
For the pastry:
In a mixing bowl, combine the flour and salt. Make a well in the center.
In another bowl, whisk together the warm water, olive oil, and egg.
Pour the wet mixture into the well of the dry ingredients.
Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic.
Divide the dough into 12 equal portions and shape them into balls. Cover with a clean kitchen towel and let them rest for 20 minutes.
For the spinach filling:
In a skillet, heat a bit of olive oil over medium heat.
Add the chopped onions and garlic. Sauté until they become translucent.
Add the chopped spinach and cook until it wilts. Remove from heat and let it cool.
In a separate bowl, combine the feta cheese, ricotta cheese, grated Parmesan, and fresh parsley. Mix well.
Add the cooled spinach mixture to the cheese mixture. Season with salt and pepper to taste. Mix until everything is well combined.
Assembling the pastry:
Preheat your oven to 350°F (180°C).
Roll out one of the dough balls into a thin circle, about 6 inches in diameter.
Place a generous spoonful of the spinach and cheese mixture in the center of the dough.
Fold the sides of the dough over the filling, creating a rectangular shape. Make sure to seal the edges.
Repeat this process for the remaining dough balls and filling.
Baking:
Place the filled pastries on a baking sheet lined with parchment paper.
Brush the tops of the pastries with a little olive oil.
Bake in the preheated oven for 25-30 minutes or until they are golden brown and crispy.
