Ingredients
  

For the pastry:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup warm water
  • 1/4 cup olive oil
  • 1 egg

For the spinach filling:

  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

For the pastry:

  • In a mixing bowl, combine the flour and salt. Make a well in the center.
  • In another bowl, whisk together the warm water, olive oil, and egg.
  • Pour the wet mixture into the well of the dry ingredients.
  • Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until it's smooth and elastic.
  • Divide the dough into 12 equal portions and shape them into balls. Cover with a clean kitchen towel and let them rest for 20 minutes.

For the spinach filling:

  • In a skillet, heat a bit of olive oil over medium heat.
  • Add the chopped onions and garlic. Sauté until they become translucent.
  • Add the chopped spinach and cook until it wilts. Remove from heat and let it cool.
  • In a separate bowl, combine the feta cheese, ricotta cheese, grated Parmesan, and fresh parsley. Mix well.
  • Add the cooled spinach mixture to the cheese mixture. Season with salt and pepper to taste. Mix until everything is well combined.

Assembling the pastry:

  • Preheat your oven to 350°F (180°C).
  • Roll out one of the dough balls into a thin circle, about 6 inches in diameter.
  • Place a generous spoonful of the spinach and cheese mixture in the center of the dough.
  • Fold the sides of the dough over the filling, creating a rectangular shape. Make sure to seal the edges.
  • Repeat this process for the remaining dough balls and filling.

Baking:

  • Place the filled pastries on a baking sheet lined with parchment paper.
  • Brush the tops of the pastries with a little olive oil.
  • Bake in the preheated oven for 25-30 minutes or until they are golden brown and crispy.
