Ingredients
  

  • 1 cup couscous.
  • 2 cups vegetable broth.
  • 1 pound Brussels sprouts trimmed and halved.
  • 8 ounces cremini mushrooms sliced.
  • 2 cloves garlic minced.
  • 1 small red onion finely chopped.
  • 2 tablespoons olive oil.
  • 1 teaspoon dried thyme.
  • Salt and pepper to taste.
  • 1/4 cup grated Parmesan cheese optional.

Instructions
 

Prepare the Couscous:

  • In a medium saucepan, bring the vegetable broth to a boil.
  • Stir in the couscous, cover with a lid, and remove from heat.
  • Let it sit for 5 minutes, then fluff with a fork.

Sauté Brussels Sprouts:

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the halved Brussels sprouts, season with salt, pepper, and thyme.
  • Sauté for 5-7 minutes until they turn golden brown and slightly crispy. Remove from the skillet and set aside.

Sauté Mushrooms:

  • In the same skillet, add another tablespoon of olive oil.
  • Add minced garlic and chopped red onion. Sauté until they turn translucent and fragrant.
  • Add sliced mushrooms and cook for 5-7 minutes until they release their moisture and start to brown.

Combine Ingredients:

  • Return the sautéed Brussels sprouts to the skillet with the mushrooms.
  • Add the cooked couscous and toss everything together.
  • If desired, sprinkle with grated Parmesan cheese.

Serve:
