Easy Squash and Zucchini Recipe: Roasted Mediterranean Delight

Ingredients
  

  • 2 cups of sliced yellow squash
  • 2 cups of sliced green zucchini
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried oregano
  • 1 teaspoon of minced garlic
  • 1/2 cup of cherry tomatoes halved
  • 1/4 cup of feta cheese crumbled
  • Fresh basil for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, toss the squash and zucchini with olive oil, salt, pepper, oregano, and minced garlic until well coated.
  • Spread the seasoned vegetables on a baking sheet in a single layer.
  • Roast in the preheated oven for 20–25 minutes, or until the edges are golden brown, stirring halfway through.
  • Once roasted, transfer the vegetables to a serving dish and add cherry tomatoes.
  • Sprinkle crumbled feta cheese over the top and garnish with fresh basil.
  • Serve immediately and enjoy this Mediterranean-inspired delight!
