of sliced green zucchini

of olive oil
Salt and pepper to taste

of dried oregano

of minced garlic

of cherry tomatoes

of feta cheese
crumbled
Fresh basil for garnish
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the squash and zucchini with olive oil, salt, pepper, oregano, and minced garlic until well coated.
Spread the seasoned vegetables on a baking sheet in a single layer.
Roast in the preheated oven for 20–25 minutes, or until the edges are golden brown, stirring halfway through.
Once roasted, transfer the vegetables to a serving dish and add cherry tomatoes.
Sprinkle crumbled feta cheese over the top and garnish with fresh basil.
Serve immediately and enjoy this Mediterranean-inspired delight!
