- 2 Gala apples cut in half through the stem, with the seeds and core scooped out
- 1 Tablespoon rice wine vinegar
- 3 Tablespoons honey
- 2 oz. crumbled bleu cheese
- Additional honey for drizzling
- Salad greens tossed with balsamic vinaigrette
Preheat grill to high heat
In a bowl, combine honey and rice wine vinegar. Add the apples and stir to coat them in the mixture. Let marinade for 30 minutes.
Remove the apples and place face-down on the grill. When the apples have developed nice grill marks, flip them and reduce the heat. Baste them with the remaining honey/vinegar mixture.
Continue cooking until the apples are somewhat softened, but still hold their shape (about 5 more minutes).
Fill the apples with the bleu cheese and place them on the warming rack. Continue to cook until the cheese has softened.
Serve each apple half with some salad and enjoy!
Tips:
- For an extra layer of flavor, you can lightly brush the apple slices with honey before grilling.
- Feel free to customize the salad greens based on your preferences.
- If you don't have balsamic glaze, you can make your own by reducing balsamic vinegar with a bit of honey in a saucepan.
