  • 4 large russet potatoes
  • 2 cup broccoli florets

  • 1. Preparing the Potatoes:
    Preheat your oven to 400°F (200°C).
    Scrub the potatoes clean under running water and pat them dry.
    Pierce each potato several times with a fork to allow steam to escape during baking.
    Place the potatoes directly on the oven rack or on a baking sheet lined with foil.
    Bake for approximately 45-60 minutes, or until the potatoes are tender when pierced with a fork.
  • 2. Steaming the Broccoli:
    While the potatoes are baking, prepare the broccoli.
    Steam the broccoli florets until they are crisp-tender. This can be done using a steamer basket on the stove or by microwaving them with a small amount of water.
    Once steamed, set the broccoli aside.
  • 3. Preparing the Cheese Sauce:
    In a small saucepan, melt the butter over medium heat.
    Add the milk and bring it to a gentle simmer.Gradually whisk in the shredded cheddar cheese until it is fully melted and the sauce is smooth and creamy.Season the cheese sauce with salt and pepper to taste.

    Once the baked potatoes are cooked and tender, remove them from the oven.
    Allow the potatoes to cool slightly before handling.
    Using a knife, make a lengthwise slit across the top of each potato, creating an opening for the toppings.
    Gently squeeze the sides of each potato to open it up further.
    Spoon a generous amount of the cheese sauce over each potato, allowing it to seep into the fluffy flesh.
    Top each potato with steamed broccoli florets.
    If desired, add optional toppings such as sour cream, crispy bacon bits, or chopped scallions.
