For Meat Cutlets:

  • 1 pound 450g ground meat (beef, chicken, or turkey)
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 teaspoon dried herbs such as thyme or oregano
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

For Buckwheat Garnish:

  • 1 cup buckwheat groats
  • 2 cups water or broth
  • 1 tablespoon butter
  • Salt to taste

Instructions
 

For Meat Cutlets:

  • In a mixing bowl, combine the ground meat, chopped onion, minced garlic, egg, breadcrumbs, dried herbs, salt, and pepper. Mix until well combined.
  • Shape the mixture into evenly sized patties or cutlets.
  • Heat vegetable oil in a skillet over medium heat. Place the cutlets in the skillet and cook until golden brown on both sides and cooked through. This takes about 4-5 minutes per side.

For Buckwheat Garnish:

  • Rinse the buckwheat groats under cold water.
  • In a saucepan, melt butter and add the buckwheat. Toast it for a minute.
  • Pour in water or broth and add a pinch of salt. Bring to a boil, then reduce the heat to low and cover. Simmer for 15-20 minutes until the buckwheat is tender and the liquid is absorbed.
