Ingredients
  

For the Pulled Pork:

  • 2 lbs pork shoulder boneless
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

For the Jalapeno Paste:

  • 3-4 jalapeno peppers stemmed and seeded
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • Salt to taste

For Assembling the Ramen:

  • 4 packs of ramen noodles discard seasoning packets
  • 4 boiled eggs halved
  • 2 cups baby spinach
  • 1 cup sliced shiitake mushrooms
  • 1 cup shredded carrots
  • 4 green onions thinly sliced
  • Sesame seeds for garnish

Instructions
 

For the Pulled Pork:

  • In a slow cooker, combine chopped onion, minced garlic, paprika, cumin, salt, and pepper.
  • Place the pork shoulder on top and pour in the chicken broth.
  • Cover and cook on low for about 6 hours until the pork is fork-tender and easy to shred.
  • Remove the pork from the slow cooker and shred it using two forks. Set aside.

For the Jalapeno Paste:

  • In a food processor, combine jalapeno peppers, garlic, olive oil, lime juice, and a pinch of salt.
  • Blend until you achieve a smooth paste. Adjust the seasoning to your heat preference.

For Assembling the Ramen:

  • Cook the ramen noodles according to package instructions. Drain and set aside.
  • In each serving bowl, place a handful of baby spinach, a portion of cooked ramen noodles, shredded carrots, and sliced shiitake mushrooms.
  • Top with a generous helping of pulled pork.
  • Place a boiled egg half on the side and drizzle a teaspoon of jalapeno paste over the pork.
  • Garnish with sliced green onions and a sprinkle of sesame seeds.

Notes

Tips:
  • Adjust the spice level of the jalapeno paste by adding more or fewer seeds.
  • For a shortcut, you can use store-bought pulled pork and simply season it with the paprika and cumin.
  • Customize your ramen toppings with sautéed bok choy, corn kernels, or a soft-boiled egg.
